Food enthusiasts are invited to a new culinary rendezvous. From 15th-17th May 2025, Royal Palm Beachcomber Luxury will welcome French Michelin-starred Chef Nicolas Isnard for three exclusive dinners, taking guests on a gastronomic journey between France and Asia. Here’s a taste of what's to come.
Travelling is undoubtedly one of the most beautiful ways to embrace different cultures. And among the finest ways to explore a country's riches, gastronomy stands as a powerful medium. This philosophy resonates deeply with Michelin-starred Chef Nicolas Isnard. Awarded a Michelin Star for his inventive cuisine that bridges regional traditions and innovation, he sets down his chef’s hat at Royal Palm’s Asiya restaurant for three unique evenings.
In collaboration with Executive Chef William Girard and his talented team at Royal Palm, Chef Isnard has crafted a bold menu that celebrates the richness of Asian flavours through a refined French lens.
To set the stage for this Oriental-inspired evening, his acclaimed signature dish will be served as an amuse-bouche: a modern take on French onion soup, reimagined in a hot-and-cold interplay of textures. A dish that has earned renown at his Michelin-starred restaurant, L’Auberge de la Charme, in Côte-d’Or. A delicate balance of contrasts, designed to awaken the senses.
The culinary journey continues with a refreshing Chinese-inspired starter—scallops infused with coriander, mint, peanuts, and lime—followed by a sophisticated Vietnamese take on foie gras. The main courses celebrate the flavours of Thailand and Vietnam: a Thai-inspired fish dish, followed by a perfectly cooked beef fillet with corn, black garlic, and a peanut sauce echoing the rich culinary traditions of Vietnam. The evening concludes on a sweet note, with a dessert that delicately intertwines green tea, tamarind, and cinnamon—a tribute to the art of Thai confections. These exclusive dinners at Asiya are open to both resident and local guests eager to indulge in this exceptional culinary collaboration.
Travel has always been at the heart of Nicolas Isnard’s journey. Even before discovering his passion for cooking, he was driven by an insatiable curiosity for the world. Over time, he has masterfully woven these two passions together, transforming his discoveries into a unique culinary identity. Since childhood, Chef Isnard has been drawn to the art of harmonising flavours. His cuisine reflects both his French heritage and Mediterranean influences, creating a refined interplay of tastes— where polenta and gnocchi meet the comforting aromas of Sunday roast lamb, garlic, and thyme.
Through years of experience, this exploration of tastes and textures has become his culinary signature. Travel is the pillar around which his creations take shape, subtly infusing each dish. For Chef Isnard, cuisine is more than just a craft—it is a universal language that brings people together and invites them to discover the world through flavour. Since 2008, Nicolas Isnard has been at the helm of L’Auberge de la Charme, where he continues to push the boundaries of culinary artistry.
