Newly Designed Seasonal Tasting Menu at Alto 88
A newly implemented 6-course Seasonal Tasting Menu designed by Executive Italian Chef, Giuseppe Brancati, is now available at the contemporary yet stylish Italian restaurant, Alto 88 of Regal Hongkong Hotel. To show the signature dishes of Alto 88, the Seasonal Tasting Menu provides a chance for diners to experience creativity and authenticity of Italian cuisine in one go.
Dishes on this extraordinary menu is made of the freshest ingredients from Italy particularly selected by Chef. Being the first to be presented for the dining experience, Cherry Tomatoes & Strawberry Gazpacho, Eggplant Quenelle, Parmesan Cracker is one of the most refreshing appetizers to be served. The combination of the freshest tomatoes and strawberries can refresh taste buds to kick off the gastronomy journey. Sicilian Yellowtail and Raspberry Tartar, Infused in Dry Malvasia Wine from Salina is a nourishing delicacy of the menu. Selecting raspberry as one of the ingredients can raise the freshness level of fish flavour. Traditional Sardinian Fregola, Rock Lobster, Vermentino Wine Foam is one of the highly recommended dishes in the menu. It is a mixture of tastes since Sardinian Fregola absorbs the essence of lobster and homemade sauce. The lobster is fresh and tasty which is irresistible. Seared Red Snapper Medallion, Courgette Declination has good presentation with using high quality cucumber form Italy giving a unique taste and visual dining experience. Black Baby Pork Chop in Pistachio Crust, Cylinder of Eggplant and Ragusano DOP Cheese Potatoes Petals, Bitter Cocoa Suace is another highlight of the menu. A scrumptious black pork chop with specially made cocoa sauce is a perfect combination which is hard to resist. Finally, Cruchy Cocoa Roll, Eggnog Cream and Bronte Pistachio Mousse ends the evening perfectly with sweetness in harmony.
